Ely: So, there’s some buzz about a new bakery opening up in town. Gail’s, the popular bakery chain, wants to take over the old Barclays Bank building on High Street.
They’ve put in plans to redesign the space, adding some nice signs and retractable awnings. It sounds like they want to make it look really inviting.
Gail’s is known for its delicious artisanal goodies. The founders, Gail Mejia and Tom Molnar, started this whole thing in Hampstead about ten years ago. Now, they’re eyeing Ely for their next spot.
This would be their first bakery outside of Cambridge, where they already have three locations. Pretty exciting, right?
The plans include making the front of the building more open so people can see all the tasty treats inside. They want to keep the charm of the old bank while making it feel fresh and welcoming.
However, the council’s conservation officer thinks they should keep the original door as it is. He suggested maybe keeping the lobby open during business hours so folks can peek inside without changing too much of the building’s character.
It’ll be interesting to see how this all plays out. A new bakery could really add to the vibe of Ely High Street!
