Ingredients
For the noodles: 1 pack Ready to Wok Noodles, 40g Garden Peas, thawed, 100g Broccoli, chopped, 1 tsp Vegetable Oil.
For the sauce: 5 tbsp Crunchy Peanut Butter, 3 tbsp Soy Sauce, 1 tbsp Sriracha, 5 tbsp Tomato Sauce, 3 tbsp Water, 1 Garlic Clove, finely grated, Small piece of Fresh Ginger, grated.
To serve: 15g Coriander, chopped, 3 Spring Onions, finely diced, ¼ tsp Chilli Flakes, optional, 1 tbsp Peanuts, chopped.
Method
- Mix all sauce ingredients in a medium bowl.
- Blanch broccoli and peas for two minutes in boiling water, then drain.
- Add noodles and veggies to a heated wok. Stir for a minute, then add sauce and stir until combined.
- Serve in bowls and top with coriander, spring onions, chilli flakes, and peanuts.
